Malvin is an anthocyanin that is the principal trace pigment in many foods which display red, blue and purple colors. Such color may not be demonstrated, however, even though a high concentration may be present due to a related pH. In grapes, malvin represents between 135 and 198 mg/100 g. It appears to be one of the most allergenic compounds, second only to gallic acid, and is highly neurological in activity. It is considered a possible causative agent in severe depression caused by foods. It appears to be highly neurological in activity.
